The secret to great tandoori chicken.
After I wrote an article on steps to making excellent tandoori chicken at home I remembered that I forgot to write about a huge important piece. I had assumed people would know about the secret to good tandoori chicken but completely forgot to mention it in my original article. First, read through my previous tips on making good tandoori chicken. After you finish those steps, then prepare your grill.
The secret to good tandoori chicken is making sure your skewered chicken does NOT touch the grill. Back in India, most BBQ’s use wood for heat and the skewers are resting on top of steel bars so that there is nothing in between the meat and the source of heat. When your meat touches the grill it will lose a lot of the smokey flavor and it will also burn the meat. Give this a try while using my previous tips and your results will be fantastic.
